Hosted by Bob Foley of Foley Estate alongside Tim Faiola of Impression California Wine Portfolio, this one-night experience pairs thoughtfully composed dishes with standout Napa Valley selections—each course designed to highlight the character, balance, and depth of the wines.
Your evening begins with Hamachi Crudo accented by Fuji apple, shallot, thyme, and lemon, paired with Chardonnay, Napa Valley 2023. Next, settle into Wild Mushroom Risotto with shaved truffle and parmesan alongside Pinot Noir, Carneros Hudson Vineyard 2017. The third course features Pressed Crispy Duck with plum puree and pickled cipollini onion matched to Petite Sirah, Napa Valley 2020. For the main courses, enjoy Braised Short Rib with celery root agnolotti, roasted root vegetables, and herb gremolata, paired with Cabernet Sauvignon, Napa Valley (Purple Label) 2018. Then savor Herb Roasted Lamb finished with pistachio, tart cherry, and black pepper demi-glace alongside Merlot, Napa Valley 2018.
